Total Time: 15–45 minutes

Yield: Approximately 3 cups (6 servings)
-
Intensity Level: Easy (No cooking required, just chopping and stirring)
Ingredients
-
4 medium ripe tomatoes (about 1.5 lbs), cored and chopped into ¼-inch pieces (Roma tomatoes are best for less water content)
-
½ medium white onion, finely diced
-
1–2 fresh jalapeño peppers, stems removed, seeded, and minced (Leave seeds in for extra heat)
-
1 clove garlic, minced or finely grated
-
½ cup fresh cilantro, chopped (stems included for extra flavor)
-
1 large lime, juiced (about 2 tablespoons)
-
1 teaspoon salt (plus more to taste)
-
¼ teaspoon black pepper
-
¼ teaspoon ground cumin (optional, for a smoky depth)
Instructions
Step 1: Prepare the Vegetables (5 minutes)
Start by washing all your fresh produce. Core the tomatoes and chop them into rough ¼-inch chunks. If your tomatoes are very juicy, you can gently squeeze out some of the excess liquid and seeds before chopping to prevent the salsa from becoming too watery. Transfer the chopped tomatoes to a medium mixing bowl.
Step 2: Dice the Aromatics (5 minutes)
Finely dice the white onion. Mince the jalapeño peppers (remember to wash your hands thoroughly after handling hot peppers!). Mince the garlic clove, and roughly chop the fresh cilantro.
Step 3: Combine the Ingredients (2 minutes)
Add the diced onion, minced jalapeño, garlic, and cilantro to the bowl with the tomatoes. Pour in the fresh lime juice. Sprinkle in the salt, black pepper, and ground cumin (if using).
Step 4: Mix and Taste (3 minutes)
Gently stir all the ingredients together with a spoon until well combined. Be careful not to mash the tomatoes—you want to keep that chunky texture. Taste the salsa. This is the most important step! Add more salt if it tastes flat, more lime juice if it needs brightness, or more jalapeño if you want more heat.
Step 5: Rest and Serve (30 minutes – Optional)
While you can serve this salsa immediately, the flavors will deepen significantly if you cover the bowl and let it chill in the refrigerator for at least 30 minutes. This allows the salt to draw out the juices from the tomatoes and for the onion and garlic to mellow slightly.
Step 6: Storage
Transfer any leftover salsa to an airtight container and store it in the refrigerator for up to 5 days. Stir well before serving again, as natural separation may occur.
Recipe Notes & Variations
-
Heat Level: For a mild salsa, remove all seeds and white membranes from the jalapeños. For a medium-hot salsa, leave the seeds in one jalapeño. For a fiery salsa, use serrano peppers or add a dash of cayenne pepper.
-
Texture: If you prefer a smoother, restaurant-style salsa, pulse the ingredients in a food processor 3–4 times instead of chopping by hand.
-
Add-Ins: Feel free to mix in ½ cup of drained and rinsed black beans or corn kernels for extra heartiness, or diced mango for a sweet twist.
