For the Cream Cheese Filling:

  • 4 oz (113g) Full-fat Cream Cheese: It is crucial that this is at room temperature. Cold cream cheese will seize up and create lumps when mixed with the sweetener.

  • 2 tbsp Powdered Erythritol (Confectioner’s Swerve): Powdered sweetener is essential here. Granular sweetener will leave a gritty texture in the creamy center.

  • 1 Large Egg Yolk: Save the white for the muffin batter.

  • 1/2 tsp Vanilla Extract: Use pure vanilla, not imitation, for the best flavor.

For the Pumpkin Muffin Batter:

  • 1 1/2 cups (150g) Superfine Almond Flour: Blanched almond flour is preferred over almond meal for a lighter crumb.

Using a hand mixer on medium speed, beat the mixture until it is completely smooth and creamy. Scrape down the sides of the bowl to ensure no lumps remain. Set this bowl aside. Chef’s Note: If your cream cheese is cold, place the bowl over a pot of simmering water (double boiler) for 30 seconds to soften it before mixing.

Step 3: Whisk the Dry Mix
In a separate large mixing bowl, combine the almond flour, coconut flour, granular erythritol, baking powder, pumpkin pie spice, and salt. Why? Keto muffins are fragile when hot. If you try to eat them immediately, they will crumble. As they cool, the coconut flour and almond flour set up, creating a dense, moist crumb.
